Few things make me happier than being able to whip up a quick, healthy meal at home…for myself and no one else. Well, sometimes I share with the hubs.
Unfortunately, when I dreamed this up, the hooligans were home for lunch, doing their best baby bird impressions, so they all tried this. And loved it, of course. And I only had enough to make it for myself for lunch for three days in a row (my plan) or one lunch for all of us. Guess what we did? Yep, everyone inhaled these.
But when school starts? I can eat these every day, if that’s what I choose to do!
Quesadillas can be as simple as cheese and tortilla, or they can incorporate as many of your favorite ingredients as possible. Today, I chose variety!
To make a basic quesadilla, I place my tortillas on a cookie sheet, add the toppings, and place another tortilla on top. Then I bake them at 350 degrees for about ten minutes, remove them from the oven, and take the top tortilla off. I add fresh ingredients, such as salsa or avocado, slice them up, and serve.
For this one, I chopped up a leftover grilled chicken breast and put that, along with some goat cheese, on my bottom tortilla. After it baked, I added diced avocado and mango salsa. It’s heaven on a plate, I tell you!
I will concede it’s a bit messy to eat (because I like some generosity in my toppings!), but if you’re lunching on your own, no one will tell!
