Blueberry Mojitos

It’s coming…I can almost see it…that first really warm afternoon when I can sit out on the deck, sipping something icy cold and delicious.  And what’s my drink of choice (when it’s 5:00 somewhere)? Blueberry Mojitos!

These are so easy to whip up…one for yourself, or a whole pitcherful for friends.

I admit it from the outset…I don’t bother with making simple syrup and squeezing limes.  I just use Simply Limeade…it’s the yummiest. I mean, if you want to make a whole afternoon of the art of the perfect mojito, go ahead and Google a recipe that allows you to do that. When I want a mojito, I want it to appear instantaneously, and using premade limeade suits my immediate gratification personality!

To make one mojito:

  • 5 mint leaves, plus a couple for garnish
  • 1 teaspoon sugar
  • 1/4 cup fresh blueberries
  • 1/3 cup limeade
  • 2/3 cup club soda
  • 1 shot of rum (2 oz)

Put the mint leaves and the sugar in the bottom of the glass and muddle them…that means smoosh them all up.  The sugar makes the mint leaves release more flavor, so this is a pretty important step…don’t skip it.

Next, smoosh the blueberries in with the mint and sugar until they’re pretty smashed. Pour the limeade, club soda, and run over and give it a stir to mix. Then just add some ice, kick back in a deck chair, and enjoy!

To make a pitcher (6-8 drinks):

  • 1/2 cup mint leaves
  • 1/4 cup sugar
  • 1 cup fresh blueberries
  • 2 cups limeade
  • 4 cups club soda
  • 3/4 cup rum

Follow the directions above, except in a pitcher.

It may not be quite warm enough to hang out on the deck yet here in the Northwest, but I’m still planning to enjoy a Blueberry Mojito or two for Mother’s Day…and to celebrate finishing up my classes for this term!  Woohoo!

Since January, I’ve completed 21 hours towards my high school math teaching degree, and now I get to relax until July 1, when the next term begins. Relax is relative, of course, with end-of-school field trips and activities for the kids, helping the hubs figure out what he wants to do after he retires from the Army this summer, and all the minutiae of daily life. But, anyway, I can always look forward to a mojito at the end of the day! Signature
