Cool and Creamy Fruit Soup

Looking for a dinner for a hot summer night?  Tired of main-dish salads?  Yeah, I know how you feel.  Our whole family loves having fruit soup for dinner, and it couldn’t be easier. We serve it with some crusty bread and, occasionally, a green salad.

Here are the directions…it’s so easy, I’m embarrassed to even call it a recipe!

Summer Fruit Soup

6 cups cut-up fruit, such as strawberries, blueberries, blackberries, bananas, kiwi

4 cups orange juice

4 cups plain nonfat yogurt

2 Tbsp honey

1 Tbsp lime juice

1/4 tsp nutmeg

Divide fruit evenly between 6 soup bowls.  Whisk together remaining ingredients and pour over the fruit. Grab a spoon and dig in!
