O’Henry Bars at Home

Way, way, way back when I was a working single girl, one of my coworkers (who was married and might have even been over 30, so a font of knowledge, I thought!) would make these fabulous bars that tasted just like an O’Henry Bar…crunchy, peanutty, and chocolate covered.  She guarded the recipe like it was a state secret, but when I left the company to move to Oklahoma, getting married en route to our next assignment, she gave it to me.

I’ve not shared it lo these many years, but since I just Googled it and found about a thousand duplicates online, I feel I can freely share it now. And it’s not like I’ve ever heard from her again, so she probably won’t come kill me in my sleep for breaking her confidence.

O’Henry Bars

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1-1/4 cups peanut butter (chunky or creamy)
  • 6 cups cornflakes
  • 12 oz chocolate chips, melted
  • Flaked sea salt, for sprinkling on top

Bring sugar and corn syrup to a boil. Remove from heat. Stir in peanut butter. Stir in cereal. Mix well and spread on greased 10 x 15 inch pan. Cover with melted chocolate.

I drew a butter knife back and forth across the melted chocolate, when it had cooled just slightly, to make a pattern, then sprinkled some sea salt flakes on top. Delish!

      They will love you for it! I made some “Lunch Lady Brownies” I saw online the other day, and I totally thought of you! They rocked, by the way.
