Feel Better Chicken Noodle Soup

Did you know Chicken Noodle Soup has been proven to contain germ-fighting antibodies?  Well, it has, and what’s more comforting than a steaming bowl of homemade chicken noodle soup when you don’t feel well?  Nothing, that’s what!  We have this soup frequently, not just when someone is sick, and no matter how much I make, we never have leftovers.

Chicken Noodle Soup

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 1 cup shredded carrots
  • 3 ribs celery, thinly sliced
  • 8 cups chicken broth
  • ½ tsp poultry seasoning
  • 1 tsp tarragon
  • 8 oz dried kluski noodles (or 6 oz alphabet pasta)
  • 2 cups diced or shredded cooked chicken

1. Heat the olive oil in Dutch oven over medium heat. Add onion, carrots, and celery and sauté until softened, about 5 minutes. Add broth, poultry seasoning, and tarragon; bring to a boil.

2. When soup boils, add noodles and cook per package directions. When noodles are tender, add chicken and cook until heated through, about 5 minutes.

The kids prefer alphabet or star pasta, but the hubs and I like kluski noodles, so I use whatever I have on hand. We like to keep it classic and have saltine crackers with ours, but sometimes I mix it up a bit with a warm, crusty baguette. Again, whatever I have works.

So go already…cook some comfort for yourself!

    So…do I have to use a Dutch oven? Can I use a pot?

    Of course…use whatever you’d like! Just be sure it’s a big pot, since this makes quite a bit of soup.
