Sledding Picnic

Before we lived here in Wisconsin, where we can sled right in our yard, Mt. Rainier became our favorite spot to get outdoors in the winter.  Of course, all that fun could be had only after a 100-mile drive (each way), so it’s a full day’s excursion to go sledding…but completely worth it!

The Visitors’ Center at Paradise (what a perfect name for it!) has a canteen with snack-type stuff, hot drinks, and such.  We always take a picnic along, which we can enjoy inside the Visitors’ Center while warming up a bit.  Usually it’s sandwiches and soup, with a dessert and some fresh veggies and fruit. These hooligans of ours work up an appetite sledding, I’m telling you!

Over the next three days, I’m going to be posting recipes for our favorite menu…starting with Rolled Sausage Bread today.  I like this bread because you can make it the night before, use really any meat and cheese you might have on hand, and it travels really well (without getting squashed, that is!).

Rolled Sausage Bread

  • 1 lb bread dough or pizza dough, frozen and thawed or homemade
  • 1 lb sausage (sweet Italian, breakfast, or even soy crumbles)
  • 8 oz shredded mozzarella
  • ½ cup grated Parmesan
  • 1 egg
  • 1 tsp Italian spice blend
  • 2 tsp parsley
  • ¼ tsp pepper

1. Preheat oven to 350.

2. Cook sausage and drain. Let cool while you roll the dough into a 10×14 rectangle on a lightly floured board.

3. Combine sausage, cheeses, egg, and spices. Spread the sausage mixture on the dough, to within about an inch of the edges. Roll up from the long side, like cinnamon rolls. Press edges to seal.

4. Lightly grease a large baking sheet and place the roll on it, curving into a “c” shape.

5. Bake for 35-40 minutes, until golden brown. Cool completely before slicing (or as long as you can wait…it might tear a little while warm, but tastes oh-so-good!).
